Meal Plans & Chicken Tortellini Toss Recipe
Here's another week of meal plans sort of inspired by my Fall/Winter meal plan ideas, but also tweaked as we needed!
Friday:
Papa John's Pizza and sugar cookies
(like most of America I'd assume, we "won" a free pizza! so I paid for some cheese bread, haha :)

Saturday:
KingFish restaurant
(some of our church members and friends came in to Louisville for a birthday and invited us along, not only did they buy us a lovely dinner they also gave us our fruit basket Christmas present which is HUGE and such a blessing, it came with some Amish cheese as well!)
Sunday:
dinner with friends at their house, we're sharing some sugar cookies too
(a weekend spent with friends is always nice, we'll enjoy dinner with some friends tonight then venture out together to another rural church in our county for an old fashioned hymn-sing, Christmas style!)
Monday:
Crock Pot whole chicken,
acorn squash (microwaved, topped with butter, cinnamon, brown sugar, pecans, cranberries),
cheddar biscuits

Tuesday:
chicken tortellini toss, garlic bread
(we've enjoyed making the chicken tortellini toss since our friends first brought it to a former small group, thanks Sheryl for sharing your recipe!)

Chicken Tortellini Toss
2 (9oz) packages refrigerated cheese tortellini
4 c broccoli and/or cauliflower
1 (14.5oz) can diced tomatoes with Italian herbs
1/2 (10oz) jar basil pesto
1 (9oz) pkg chicken breast strips (or other cooked chicken you may have on hand)
parmesan cheese
mushrooms or other vegetables, optional
Cook tortellini as directed on package.
Add broccoli during last 3 minutes of cooking.
Drain all and return to pan.
Stir in tomatoes (undrained), pesto, chicken, and any additional vegetables.
Cook until heated through.
Top with cheese.

chicken and wild rice soup, fruit, cheddar biscuits (if any are left!)

I'm looking forward to next week's meal plans as we'll be doing lots of cooking for Christmas, family visiting, and a church pot-luck!
